    Portobello Mushroom soup

    melt butter
    saute onion until soft
    add mushrooms (including reconstituted shitakes) and saute 5 min.
    Reduce heat to low, add flour, stirring
    Gradually stir in broth and 1/2 of the sherry
    Bring to boil stirring often
    Reduce heat and simmer about 10 minutes
    Use immersion blender or remove mushrooms and onions and a bit of broth and blend and return to pot.
    Add seasoning, remaining sherry and yogurt stirring till heated through.

    Greenie,

    Sounds yummy and you and I seem to have similar taste preferences. But what is an immersion blender? I will google. I have a blender and a food processor but never heard of immersion blender.

      lUCky, it's a stick blender that you can put right in the pot. You don't have to scoop out the stuff and process it in small batches in the blender.

      Zen, marsala would be very nice! The roasted squash soup calls for those mushrooms too - it is a devine soup.

        Sounds good Greenie. Unfortunately, if I had a bottle of sherry at home it wouldn't make it as far as the soup.

        Now then. Is "t" different from "T" and is it teaspoon or tablespoon or something else?

          Ha! I have an immersion blender! I bought it for smoothies.

          Marshy, t is teaspoon and T is tablespoon. Makes perfect sense, doesn't it?

                      Thanks for the recipe. I just made this today, I had a big container of mushrooms in the fridge that was about to go bad. I Normally I'd probably would have thrown them out since I only use a few mushrooms at a time to make an omelet. I remembered coming across this recipe a few days ago and made the soup.

                      I pretty much followed the entire recipe as is. I added parsley and dill and used a variety of mushrooms including shitake, portabello and white . Delicious. I had some for lunch a plan to have the rest for dinner!
