        A question re: Meatloaf

Ha ha... I use a recipe from Betty Crocker's cookbook that uses 1/2 lean ground turkey and 1/2 extra lean ground beef. No need to add extra moisture. Kids, hubby, and my parents (who only love unhealthy foods!) love it. I'll look for the recipe...

            Healthy Meat Loaf (Betty Crocker)

This meat loaf has been updated for today's tastes. Ground turkey replaces half of the beef, and egg whites (or cholesterol-free egg product) fill in for a whole egg. And as always, leftover meat loaf makes a great sandwich.

            Servings: 6

            Ingredients:
            3/4 pound lean ground turkey
            3/4 pound extra-lean ground beef
            3/4 cup chopped onion (about
            1-1/2 medium)
            1/2 cup fresh bread crumbs
1 tablespoon tomato puree or ketchup
            2 teaspoons Dijon mustard
            1/2 teaspoon salt
            1/4 teaspoon white pepper
            1/8 teaspoon ground nutmeg
            1/8 teaspoon Worcestershire sauce
            2 egg whites or
            1/4 cup cholesterol-free egg product
            1 clove garlic, finely chopped

            Instructions:

Heat oven to 375 degrees. Spray loaf pan, 8-1/2 X 4-1/2 X 2-1/2 inches, with nonstick cooking spray. Mix all ingredients. Spread evenly in pan. Bake about 1 hour or until no longer pink in center. Drain immediately.

Rainy's note: I add a can of tomato sauce to the top because THAT'S COMFORT!

It's very easy too! I usually make two!

Just be careful about your side dishes!

                  A question re: Meatloaf

Does anyone measure out an 1/8 teaspoon of anything?
For that amount of meat I'd be chucking in at least a tsp of nutmeg and a dessertspoon of Worcestershire sauce, then maybe a sprinkle of mixed herbs to jazz it up a bit.

Um... what is cholesterol free egg product?

                    A question re: Meatloaf

                    Don't worry, I googled it.

With all the meat, I can't see that a couple of whole eggs would hurt...... it would work out to 1/3 egg per serve.

                      A question re: Meatloaf

                      Rags,

Actually, the egg yolk, despite being the fatty part and loaded with cholesterol, also has some very good properties. Science is now deciding that it is seldom the cholesterol you actually eat that causes high cholesterol but genetics and eating high fat and high carb foods in combination.

Egg yolks contain lecithin, which fights cholesterol within the body.

                        Hi Cindi,
I didn't know that about the lecithin, or the fat/carb combination, thanks for filling me in.

I add shredded zucchini, shredded carrots and/ or finely chopped spinach. I'm a fan of hidden vegetables in meatloaf, meatballs and chili.

Did try oatmeal once. It was rather coarse & dry. One egg, milk. Back to bread crumbs & cracker mix. I was a mixologist. I like a bit of cumin in mine. I use a lot of spice in cooking. In fact, one of anything use to not satisfy & some days I still have problems. I've done turkey ones to. Yum.

Last yr I planted my 1st herb garden. I planned for a small basil, rosemary, oregano. Then I took off & away I went, kept going..
