      Rags,

      Actually, the egg yolk, despite being the fatty part and loaded with cholesterol, also has some very good properties. Science is now deciding that it is seldom the cholesterol you actually eat that causes high cholesterol but genetics and eating high fat and high carb foods in combination.

      Egg yolks contain lecithin, which fights cholesterol within the body.

      I add shredded zucchini, shredded carrots and/ or finely chopped spinach. I'm a fan of hidden vegetables in meatloaf, meatballs and chili.

      Have you ever tried Oatmeal instead of bread crumbs ? I am going to try this receipe...looks good. Rainy, what side dishes do you suggest ?

      Did try oatmeal once. It was rather coarse & dry. One egg, milk. Back to bread crumbs & cracker mix. I was a mixologist. I like a bit of cumin in mine. I use a lot of spice in cooking. In fact, one of anything use to not satisfy & some days I still have problems. I've done turkey ones to. Yum.

      Last yr I planted my 1st herb garden. I planned for a small basil, rosemary, oregano. Then I took off & away I went, kept going..

      Be careful with oatmeal vs breadcrumbs. If you use extremely low fat beef/turkey, chicken, etc then oatmeal can dry it out too much. You should only use oatmeal with normal meat (e.g. 85% lean). If you're using meat with less fat than that then use bread crumb.

      And Ms Rainy Renee hasn't posted in months - not sure where that chica got herself to. I usually serve a steamed veggies with my meatloaf and egg noodles are nice if I make gravy to go with the meatloaf. Otherwise parslied potatoes is nice.

      incidentally I like to use ground-up nuts in meatloaf and especially meatballs. pecans are amazing this way. just grind them up in the blender or food processor to a semi-fine granular form. no bad carbs with your meat that way

      Yiz are all nuts! Truly! ;o)

      Cindi... I don't use an egg... I just put a finely chopped big onion in for moisture... and a small amount of breadcrumbs. And fresh garlic, ketchup, sea salt and Worcestershire sauce. I keep it dead simple. Spritz ketchup on the top. I just made one actually... and I used turkey instead of beef... and yer wan indoors didn't have a clue it wasn't beef.

      Sounds to me like we need a meatloaf cook-off!

      Oh, and Cindi, I made ribs last weekend. The Southern way. It's the only way to go. That par boiling thing is nonsense imho. I bake them in the oven and finish them off on the grill.
