    incidentally I like to use ground-up nuts in meatloaf and especially meatballs. pecans are amazing this way. just grind them up in the blender or food processor to a semi-fine granular form. no bad carbs with your meat that way

    Cindi, I no longer eat red meat but when I did I always made mealoaf with the 'meatloaf mix' you get at the supermarket. Equal amounts of ground beef, ground veal & ground pork. Not exactly a low fat meal but the meatloaf always turned out moist. I used 1 egg/lb of meat & just enough breadcrumbs to hold it together. Made great leftover for sandwiches too

    I would check with the Undies too Cindi. I think several of them have substituted mulch for breadcrumb.
