      Paleo tuna salad cheap and EZ

      To some of you this is old hat, and for others maybe
      a primer for getting into primal/paleo eating on a
      budget.

      Very finely mince and add to mixing bowl:

      A whole bunch of parsley (it's very nutrient dense)
      Half of a medium onion One red or yellow bell pepper
      (they have more antioxidants than the green ones)
      Clove of garlic Handful of Greek black olives (or
      favourite olive) Couple tablespoons of capers if you
      have them (or substitute some Dijon mustard)

      Also add the zest and juice of one lemon.
      Salt and freshly ground pepper to taste
      Several tablespoons of good extra virgin olive oil (I
      use probably 1/4 cup as I like this really moist)

      Finally add a large 11oz family pack of tuna and mix
      well.

      Let sit for 15 minutes and serve at room temp.

      Note there is no mayo in this. Most commercial
      mayo is made with soybean or other industrial seed
      oils which Cause oxidative damage/inflammation to
      the body.

      Have fun!

      This was amazing - thanks for sharing the recipe. I used the dijon mustard in place of the capers. I think I will try two garlic cloves next time, though. I like really garlicky food and I couldn't really taste only the one clove.

      Paleo tuna salad cheap and EZ

      Cheap satisfying paleo foods that I've discovered are coconut milk (about $1 a can) and beef. Cabbage, carrots, squash are pretty cheap and energy dense too. I guess also eating in season is cheap and healthy too.
