1/2 c celery, sliced
1 med garlic clove, minced
1 T olive oil
1 c vegetarian burger, frozen
1 can kidney beans (15 oz)
1 can black beans (15 oz)
1 can vegetarian chili beans (15 oz)
1 can tomatoes, diced and unsalted (14.5 oz)
1 can corn, undrained (15 oz)
1 can green chilies, chopped (4 oz)
1 can vegetable broth (14.5 oz)
1.5 c water
1/2 c instant brown rice uncooked
1/2 packet taco seasoning
1 bag tortilla chips, unsalted
1 package SoyaKass Cheddar cheese (12 oz)
In large pot, saute onion, celery, and garlic in oil. Add burger and satue until lightly browned. Add canned beans, tomatoes. corn, chilies, and simmer 10 min more, Break about 6 chips for ea serving and place in the bottom of ea bowl before spooining soup in. Shred soy cheese and sprinkle desired amt on top before serving. Yield: 14 cups
