National aquarium and amusements are good in Bray but not a lot shop wise if the weather turns bad. Get off the dart at Dun Laoire there is an ok indoor shopping center there.
If its awful out and you want a huge indoor shopping center go to Dundrum, you can get there on the LUAS from St Stephens green. They have everything there.

You know anything about the Viking Splash Tours?

I do and they are supposed to be great, although I havent done it. They go from Christchurch I think, in these semi-amphibious vehicles and drive into Spencer dock on the tour. Oh and you get to wear viking helmets too (worth it for that alone) and shout at passers by.

Yeah, I've been to the South. Got the ferry over to Wexford and we drove around a few places. We were there for 11 days... about 14 years ago though.
