YOu slice the meat into strips, which is then placed in a mixture of salt, vinegar, herbs and spices for a couple of days. It is then hung out to dry... Cured meat, essentially.

It is somewhat similar to beef jerky (sp?)

It IS yum... You do get some vile stuff - the commercial variety, but ours is home-made.
