    I've made them with basil instead when I couldn't get any coriander and they were very nice! I got a zucchini corer off ebay which is a lot like an apple corer but skinnier. I started with teeny ones, decided it was too much work and got bigger zucc's. Now I cut em in half, core both sides and put em in a big pot stuffed. But you don't have to use zucchini's if you don't want to core them. Can use same stuffing in Tomatoes or squash and bake them
    I just love them boiled in their tomatoey juice. The rice swells up and all the herbs are so delicious. The zucchini's take on the flavours of everything. It was something I loved to eat in melbourne and was so excited to be able to make myself!!

    I hope Happs is feeling better and Glassy too..

    Here is a pot I made early on using an apple corer. There is way less zucchini and way more stuffing these days with my fancy corer. Somebody needs to teach me now to put in a pic without it being so humungous

        That looks yummy Ficks - never seen one of those thingummies before .... might have to keep an eye out for a Lebanese store!

        I went to an amazing event at the Black Dog Institute this morning. Andrew Robb talked about his personal journey with depression, and did it in a very quiet and open way . I dont think there were very many dry eyes at the end. I may not like his politics, but at a very human level he was quite inspiring.

          They look soooo good.
          I'm going to try doing them like that.
          I have an apple corer somewhere at the back of a drawer.

          Bought a silpat yesterday. Cost a King's ransom!
          Am also in email discusssion about a pastry with head teacher at local TAFE after I phoned for help.
          How good is that.
          I may well be doing a pastry cook course next semester.


          See, I've stopped all conversation about the SofO as we're all talking about zucchinis..


          OK, off to shower then on the train to Sydney. See you on Sunday.

                    Angel - it is truly yummy!! We ate most of it over two days. Some under scrambled eggs for breakfast, some under avocado/lemon juice mix topped with tomato and cucumber for lunch. There was some left over that I just stuck in the fridge and at 4pm it was beautifully moist. Had the rest for lunches this week on Monday and Tuesday!

                    I am going to make some more tonight for cooking tomorrow :-)

                    Didn't get a POETS day today and I'm feeling very weary. I am picking up mexican food on the way home and a sleep in tomorrow is my highest priority!!

                          How was your toast Angel?? Hope you enjoyed it! I made another loaf this morning, but I'm leaving it in the fridge for 24 hours before I cook it. Rags - using the silicon pan for the first time - thanks again!!

                          I'm having an "at home" day ……. work was pretty bruising this week. Mr B and I went out for breakfast and came home with a really good computer chair for him from a garage sale ($15 ), but he has now gone out to work and I plan to stay indoors with brief excursions out for essential body maintenance like walking and getting my legs waxed.

                          Looking forward to it being June ……. I know it is a bit silly, but I find it easier to start new things at the beginning of a new month, particularly when it starts on a weekend or a Monday :H:H. So I've just signed up with myCompass, which is an internet based self-management tool for people with depression, and the "I Quit Sugar" 8 week programme that starts on Thursday. The last couple of weeks I have been very teary, resorting too often to takeaways (even though they are usually relatively healthy takeaways! :-) ), not getting enough exercise and generally feeling tired and unwell. So it is time to take charge of my life again and stop moping around feeling sorry for myself.

                                Arvo Undies! sport Saturday followed by a cuppa with a good friend, bite to eat and I've been wiped out since... just put my head up and settled back into a sitting position on the couch, how lazy is that? relaxing is pretty cool I'm discovering.

                                The Lamp is burrowing away downstairs, I'll post some pics soon as he is like a dog with a bone, making the extension still happen is a priority for him and takes his mind off things I think.

                                Missy, I like the Sarah Wilson program so hope you do too. The locust version of her slow cooked Lamb Shank recipe was bloody good.

                                I'm in a quandary about work too. The universe seems to be telling me its time for a change and I've just got to bite the bullet and make a decision. Lots of stuff happening and new things, which is exciting and scary at the same time. This is all reassessment of what we both want and value so I'm looking forward to starting a new month to see what unfolds.
