Bacon and Tomato Cauliflower salad
I did Atkins several years ago and was very successful with it, except when I quit doing the low carb the pounds went back on really, really fast. However, I still have some favorite low carb recipies that I make. I love this summertime salad.
Ingredients:
1/2 head cauliflower made into cauliflower rice
Two - Three slices of bacon, cooked crisp and crumbled
1 large or 2 medium tomatoes, diced
5-6 spring onions, sliced
2-3 T Mayonnaise
Salt and pepper to taste
To make cauliflower rice:
Run the cauliflower through the food processor using the shredder blade (the blade with the little holes). Place in microwave safe bowl with 1/4 C water. Cover and microwave for 8 minutes. Drain. (I used paper towels to press down on the cauliflower while in the colander to get all the moisture out.)
Combine all ingredients. Chill before serving. This dish holds together very well and is suitable for putting in a food mold.
