when butter foams, add carrots and shallots
cook for five minutes or so over medium heat until shallots turn clear
add 1/4 cup water,cover and simmer over med-low heat until water is almost all absorbed and carrots are tender
add peas and salt and pepper to taste
cover and cook for another three minutes or so until peas are cooked. for additional flavor, add fresh chopped parsley.
taste to make sure seasonings are how you like them, feel free to add more butter or cook longer if you like your dish creamier or your veg softer.
