Here's a hint regarding the veggie sausage. I use morningstar patties and bake them according to package directions. I roughly chop them and add them last so they stay chunky. Honestly, I can't stop eating this casserole!

never peeled my crooknecks. Also don' t peel the yelow summer squash I've been substituting (as all the loca; farm stands have it)

I only peel the older, tougher squash. If it is really young I don't.
