    over-ripe banana cake

    mash up those bananas! about 4 or more will do.

    throw in a half-teaspoon of salt and a teaspoon of vanilla.

    blend half a stick of melted or very soft butter into the banana mixture.

    dry roast and chop fine at least a cup of walnuts and add them to the bananas.

    mix to frothy several eggs (6 or more for a good bunch of bananas).

    blend the eggs into the other stuff.

    pour into a large, shallow dish.

    bake for about half an hour at about 350 degrees.

    this is hard stuff to overcook

    enjoy this tremendous delight as a sweet and protein-rich snack any time of day!

        This sounds great! I've got 4 overripe bananas right now. I love that this recipe doesn't have flour in it.
