    Rice-less Veggie Sushi

    1. Cut cukes in half and de-seed by running your thumb down the middle. Discard seeds.
    2. Chop carrots, cukes, and avocado in long strips and set aside.
    3. For the "rice," chop 1/2 head cauliflower
    4. Place cauliflower and a handful of cashews in blender and pulse until grains resemble rice.
    5. Place a sheet of nori flat and spread side-to-side and 2/3 lengthwise with the "rice" mixture.
    6. Place veggies on rice at the end.
    7. Carefully, begin rolling. When the roll just closes, squeeze to seal it. Continue rolling until the roll is finished.
    8. Cover with plastic wrap, slice, remove wrap and serve with soy.
    9. You can substitute any sushi filling you like, or add vinegar or date paste to the "rice."

    Isn't this a paradox ......doesn't Susi mean "with rice" . Oh well........I don't care for Susi, but my oldest son loves it. Well done......

        There's always sashimi. Fish minus the sushi. Yum! Interestingly we have some of the best sushi right here in Colorado Springs. We have a chunk of asian population probably because of the military.
        And I've had sushi many places closer to the ocean.
