a primer for getting into primal/paleo eating on a
budget.
Very finely mince and add to mixing bowl:
A whole bunch of parsley (it's very nutrient dense)
Half of a medium onion One red or yellow bell pepper
(they have more antioxidants than the green ones)
Clove of garlic Handful of Greek black olives (or
favourite olive) Couple tablespoons of capers if you
have them (or substitute some Dijon mustard)
Also add the zest and juice of one lemon.
Salt and freshly ground pepper to taste
Several tablespoons of good extra virgin olive oil (I
use probably 1/4 cup as I like this really moist)
Finally add a large 11oz family pack of tuna and mix
well.
Let sit for 15 minutes and serve at room temp.
Note there is no mayo in this. Most commercial
mayo is made with soybean or other industrial seed
oils which Cause oxidative damage/inflammation to
the body.
